Celebrating Good Food with Chef Sau del Rosario at the Taal Vista Hotel

Taal Vista Hotel. the first hotel in Tagaytay City and the iconic property that boasts the best vantage point overlooking v the Taal Lake and Volcano, celebrates its 75th anniversary with a spectrum of culinary masterpieces by the country's top celebrity chefs. Dubbed as Culinary Gems: A Festival of Filipino Flavors Buffet, the series showcases special themed buffets on select weekends from September 6 to November 23 at the hotel's all-day dining restaurant, Café Veranda.

Last weekend, we were fortunate to have indulged in Chef Sau del Rosario's kapampangan specialties. Tracing his roots from Pampanga, Chef Sau shared that he is related to the famous food historian, Atching Lilian Borromeo, and the Hizon's (a clan famous in the culinary realm), among others. He received his culinary arts training in Paris, France and had worked in hotel restaurants in Singapore, Shanghai and France. He served as a Chef in many prestigious hotels in Manila had hosted and judged several television cooking shows. Simply put, these credentials alone tells that his kapampangan dishes are not to be missed. So, when we were at the Taal Vista for a weekend staycation, we made sure to sample his dishes at Cafe Veranda.

We started with Chef Sau's appetizers such as Maya-Maya Mayonesa, Donya Editha’s chicken galantine, Mechico tamales shooters, and fried catfish buro pockets, mustasa and paku salad,

The Mechico tamales shooters are delightful servings of sticky rice topped with ham strips and salted duck egg. It's a good palate teaser as it has a seamless blend of sweet-salty flavors.

The Donya Editha’s chicken galantine reminds me of my aunt's embutido, which she would usually serve in special dinners at our house in Nueva Ecija, Pampanga's neighbor province.

Mechico tamales shooters

The stars of this buffet (in my opinion) are no less than the pork sisig foie gras and fried oxtail ravioli in macadamia kare-kare truffle sauce among others. Warning: these are sinful. As in deadly sinful. 

The fried oxtail ravioli in macadamia kare-kare truffle sauce has the right combination of crunch and juicy goodness, bathed in a rich sauce. And yes, the sauce is infused with truffle. For the record, I love anything with truffle--even scrambled eggs with a few drops of this potent potion also known as truffle oil excite me!

The pork sisig foie gras--small chunks of pork and duck liver--is spicy but works really well with plain rice...or cold beer ;)

For desserts, we tried the suman sa lihiya with mango and coco jam (skewered rice cake dipped in a sweet coco jam sauce and served with chunks of mango), tibuk-tibok (a light delicacy made of cornstarch and coconut milk topped with sweetened jackfruit and taro chip), and pandan crepes with coconut f loss which turned out to be the crowd's favourite--soft, thin pandan-infused batter with crisp coconut floss drizzled with you choice of syrup.

Also included in the spread were bangus pockets, kare-kare vol-au-vent, tidtad babi (pork blood stew, another favorite!), dinakdakan rolls, and a lot more.
